Smashed Potato
Serves 6
Easy to prepare and incredibly delicious, they make the perfect side dish for any meal.
Ingredients
- 1kg baby potatoes
- 10ml salt
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons extra-virgin olive oil
- 3ml onion powder
- Freshly ground black pepper
- 30ml finely chopped fresh herbs such as parsley, chives, and/or dill
- Flaky sea salt
- Parmesan cheese
Directions
- Preheat your oven to 220°C. Then, generously coat two baking sheets with olive oil, ensuring that the entire surface of each sheet is well coated to prevent sticking.
- In a large pot, place the potatoes and add 5ml of salt. Fill the pot with enough water to cover the potatoes. Bring the water to a boil over medium-high heat. Cook the potatoes until they are soft and fork-tender, typically for 15 to 20 minutes
- After boiling, drain the potatoes and allow them to cool slightly. Transfer each potato to one of the oiled baking sheets. Use the back of a measuring cup or a fork to gently press down on each potato until they're about 5mm thick.
- Next, drizzle the potatoes with olive oil and sprinkle them with garlic powder, onion powder, the remaining 5ml of salt, and black pepper to taste.
- Roast the potatoes in the preheated oven for 25 to 35 minutes, or until they are golden brown and crisp around the edges. Remember to rotate the baking sheets halfway through the cooking time for even browning.
- Season to taste with more sea salt, or flaky sea salt, fresh herbs, and sprinkles of Parmesan, if desired.
