Stuffed Potato

Makes 16 delicious stuffed potato skins. Easy to prepare and utterly delicious.

Ingredients

  • 8 potatoes
  • 30ml vegetable oil
  • 200g bacon
  • 30ml cream
  • 30ml salted butter
  • Salt and pepper
  • 1 ¾ cups of any cheese you prefer
  • 120ml soured cream
  • 4 chopped spring onions

Directions

  1. Preheat your oven to 190°C using the fan setting.
  2. Prick your potatoes with a fork to allow steam to escape. Place all the potatoes in the microwave and cook on high for 10 minutes. This will help start the cooking process. Alternatively, if you prefer not to use the microwave, you can add an extra 20 minutes to the cooking time in the oven.
  3. Place the microwaved potatoes directly on the oven shelf and bake for 35-45 minutes, until they are crisp on the outside and soft on the inside. You can check for doneness by inserting a knife into one of the potatoes; if it slides in easily, the potatoes are done.
  4. While you wait for your potatoes to bake, fry the bacon in a bit of oil, and put aside.
  5. When your potatoes are ready, take them out of the oven and cut each one in half. Using a tea towel to protect your hands from the heat, pick up a potato half and scoop out the insides into a large bowl with a spoon. Repeat this process with the remaining potato halves.
  6. Add the cream, butter, salt, and pepper to the bowl with the scooped-out potato insides. Use a potato masher or a fork to mash the mixture until it becomes fluffy and well combined.
  7. Add the crispy bacon and cheese to the mashed potato mixture, reserving a small handful of cheese for sprinkling on top later. Mix everything together until well combined.
  8. Take one of the potato skins and fill it with a spoonful of the potato mixture. Place the stuffed potato skin in a baking dish and sprinkle a little of the reserved cheese on top. Repeat this process with the remaining potato skins.
  9. Once all of the potatoes are stuffed and topped with cheese, place them back in the oven at the same temperature (190°C) for 10-15 minutes, or until the cheese is melted and bubbly.
  10. Take the stuffed potatoes out of the oven and serve them hot, topped with a dollop of soured cream and a sprinkling of chopped spring onions. Enjoy!
